Yam & Spinach Porridge

The most delicious One Pot vegan Puna Yam porridge with spinach. Purification of the died from the body is important. Crayfish powder got Nigerians on a chokehold (it’s not necessary) This no meat recipe is so revitalising and simple to make: 30mins on medium low heat.

All You Will Need Is 

  • Puna Yam ( or Potatoes of choice )
  • Water 
  • Palm oil -Carotino 
  • Sundries Tomato paste 
  • Shallots 
  • Ginger / garlic / Pimento Powder 
  • Green Scotch bonnet 
  • Spinach 
  • Himalayan Salt / vegan Bullion @marigoldengevita

Instructions:

  1. In a small pot, heat the palm oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until softened.

  2. Add the diced yam to the pot and stir to combine. Add the vegetable broth/ Water and bring to a boil. Reduce the heat to low, cover the pot and let the yam cook for 10-15 minutes, or until tender.

  3. Add the chopped spinach and the sundried tomato paste to the pot and stir to combine. Let the spinach cook for 1-2 minutes, until wilted.

  4. Let the mixture cook for an additional 2-3 minutes, until heated through.

  5. Season the porridge with smoked paprika, salt, and black pepper to taste. Serve hot and enjoy!
